Driven by the challenge of balancing quality family meals with a hectic lifestyle, Diem established her business to empower parents with ready-to-serve, wholesome dishes. Her journey began with a bold cold call to Woolworths, leading to Coco & Lucas' Kitchen products being stocked in nearly 1,000 stores. Today, the brand has expanded to over 2,500 stores nationwide, including Coles, Woolworths, Aldi, and Costco. This milestone epitomises Diem's tenacity and the brand's commitment to quality.

Diem’s rich heritage of craftsmanship from her Vietnamese parents and sustainability ethos from her grandmother fuel her innovative spirit. She envisions Coco & Lucas' Kitchen as a dominant force in the APAC region's prepared meals market and a significant ingredients supplier to B2B food manufacturers, targeting US$50m–US$100m in revenue. Her strategic plan includes international growth and partnerships, with a mission to feed the world through accessible, nutritious food solutions.
